Summer Fruit Blondies
We love summer fruits, and we love blondies, so what could be better? Well, let me tell you…
Not only are these blondies plant-based, filled with fruit (probably getting you one of your five a day), they’re also packed full of protein! Yep, so you can totally munch down one of these beauties and call it a ‘post work out snack’. Food that taste good + does your body good is the winning combination for us!
Cooked using
- 55g Good Hemp Pure 75% Protein
- 180g flour
- A pinch of salt
- 1 1/2 tsp baking powder
- 70g light brown sugar
- 120ml Good Hemp Seed Milk
- 2 cup of frozen summer fruits
- 1-2 tsp agave or maple syrup
Method
Preheat the oven 200c (Gas mark 6)
In a large mixing bowl, sieve the flour and add the protein, baking powder, sugar and salt. Continuously stir and mix thoroughly.
Next add 3/4 of the milk to the mixing bowl and mix until smooth before adding the remaining milk to the bowl. Lastly, add half of the frozen berries to the bowl and mix again.
Now spray your tin with olive oil (or butter) evenly and place your parchment on top.
Transfer your batter to the tin and, using a spatula, spread it evenly.
Let your blondies bake for 20 mins, to double check that the inside has baked insert a toothpick and if there is batter residue, the brownie need to be cooked for a further 5 mins.
10 mins before the brownies are done, add the remaining frozen berries in a saucepan with 2 tbsp of water. Heat the saucepan up on low-medium heat, stir and mash the fruit a bit.
To thicken the compote gradually add your syrup, once you achieved your desired thickness, set aside.
Once the brownies are out of the oven and have cooled, cut them up evenly and spread the summer fruit compote evenly on top. Serve up!
