Vegan Laksa Noodles 🍜

Are you bored of all the recipes you have up your sleeve? Well same until @whatluceeats made us this vegan laksa noodle curry! It’s packed full of flavour, tofu and HEMP!

We talk about hemp a lot and it is in the majority of our recipes, but do you know why we go on about it so much? Well one reason being is its health benefits. Hemp is really really good for your gut.

➡️ Grace, a nutritional therapist spoke to Good Hemp last year and explained that “our gut (intestines) is constantly talking to our brain and vice versa. If you throw bad food into your body your gut will get mad at your brain and that will manifest in anxiety and oftentimes, depression.”

➡️ The billions of “good” bacteria that are found in your gut help prevent inflammation and improve how well you absorb nutrients from your food and activate the neural pathways between the gut and the brain. Not only that but 95% of your serotonin – our happy hormone that helps regulate sleep and mood – is produced in your gut, meaning there’s a direct link between the food you eat and your happiness levels.

➡️That got us thinking, are there any particular foods I should be tucking into? (Hemp! Obviously) we’re a bit biased, but Grace told us that making sure you’re getting all the essential amino acids and Omega 3 is really important – which is basically what hemp is all about. In case you missed it, hemp is super rich in Omega 3 and is one of the few plant-based protein sources that contains all nine essential amino acids. Amino acids make up the chemicals that your brain needs to regulate your thoughts and feelings. Scientific proof that hemp makes you happy!

Ingredients
  • 1 teaspoon Good Hemp Oil
  • 3 shallots (sliced)
  • 2 garlic cloves (crushed)
  • 1 Birdseye rec chilli (diced)
  • 1 red pepper (sliced)
  • 3/4 teaspoon ground turmeric
  • 1/2 teaspoon ground coriander
  • 200ml vegetable stock
  • 250ml Good Hemp Seed Milk
  • 1/2 teaspoon coconut sugar
  • 2 heads of pak choi
  • 1 block of smoked or plain extra firm tofu (cut into chunks)
  • Pinch of salt
  • 2 nests of rice noodles
  • Fresh coriander to garnish
  • Good Hemp Seeds to garnish
  • Extra sliced red chilli to garnish (optional)

Method

Begin by heating a large pan on a medium heat and adding the oil.

Next add the shallots and cook for a few minutes until they begin to soften and turn translucent.

Add the garlic, combine and cook for a couple of minutes before adding the diced chilli and red pepper along with the ground turmeric and ground coriander. Combine so everything is evenly coated in the spices.

Now add the vegetable stock, Good Hemp milk and coconut sugar and combine.

Meanwhile place the rice noodles in a bowl and cover with boiling water. Leave for a few minutes. Once soft drain and rinse with cold water.

Add the pak choi and tofu chunks and leave for a minute. Season with a pinch of salt.

Then add the cooked noodles and combine.

Serve with fresh coriander, a sprinkle of hempseeds and extra red chilli should you wish.
