Tie Dye CBD Ice Cream Lollies
Made with earthy hemp and bright seasonal berries, be as creative as you like making these tie-dye ice cream lollies! In this recipe we use vodka to help the ice cream from forming ice crystals and freezing too solid. Vodka is a good choice of alcohol because of its neutral flavour, but any alcohol can be used for this effect. However, this can be excluded you’ll just end up with less creamy ice cream.
Cooked using
- For the ice cream
- 50ml coconut oil, melted
- 100ml Good Hemp Seed Milk
- 100ml coconut milk
- 50g cashew nuts, soaked for four hours and rinsed
- 50g hemp seeds
- 1- 2 pipette CBD
- 1 vanilla essence
- 60ml honey or sweetener of choice
- 1 tbsp vodka (optional)
- 1 tbsp lemon juice
- 1/2 tsp vanilla extract
- For the berry jam
- 150g frozen berries
- 2 tbsp maple syrup
- To coat
- 150g Vegan white chocolate, melted to enrobe
Method
Start by making the berry jam, placing the berries in a small saucepan with the maple syrup and simmering until they have broken down and the liquid is syrupy. Let the berries cool slightly and then blend the berries to a smooth jam.
Blend the Hemp ice cream ingredients in a high powered blender until smooth. Layer the berries and ice cream in a lollipop mould and insert a lollipop stick. Freeze the lollipops for at least four hours or until totally set.
To serve Carefully take the lollipops from the mould and enrobe them in the melted white chocolate. Have a cooling rack ready to set the ice creams on and put them back in the freezer until you are ready to eat them.
