Rainbow Fruit Tarts with Citrus CBD Glaze

How better to rainbow up your dessert than with fresh fruit, to hit all colours in the pride flag here we’re using strawberries, mandarins, peaches, apples, blueberries and grapes! Not only do these look great, they also taste delicious and are the perfect summer pud!

Cooked using

  • 320g ready-rolled puff pastry
  • 1/2 tsp caster sugar
  • 1 can full-fat coconut milk (chilled overnight!)
  • 150g strawberries
  • 3 mandarins
  • 2 peaches
  • 2 green apples
  • 150g blueberries
  • 100g purple grapes
  • 2 tsp dark chocolate (grated)
  • 2 tsp hemp seeds
  • 1 tbsp golden syrup
  • 1 pipette Citrus CBD oil



Preheat the oven to 220°C (fan 200°C) and line a baking tray with baking paper, then roll out your puff pastry on the baking tray.


Use a large cookie/tart cutter to cut the pastry into 9 equal pieces and sprinkle each piece with caster sugar.


Bake for 12 minutes, turning halfway through to ensure even baking.


In the meantime, scoop the solid cream from a can of chilled coconut milk and place it in a large bowl. Whip the coconut cream with an electric mixer until light and fluffy (about 2 minutes).


Next, cut your fruit into small cubes.


When the puff pastry is baked, let it cool completely. Then top off each piece with whipped coconut cream, fruit, grated dark chocolate and hemp seeds.


Mix golden syrup with 0,5 tbsp of cold water, add CBD oil and drizzle on top of your fruit tarts. Enjoy!
