Pancakes with berries
HAPPY PANCAKE DAY!
We love Pancake Day because it gives us an excuse to eat pancakes for breakfast, lunch and dinner! 🥞The real question is, what do you like to top your pancakes with?
@Whatluceeats has gone for a more tropical twist on the classic pancake, adding coconut yoghurt and dried coconut flakes to pancakes! If you want to recreate this delicious looking pancake stack, make sure to tag @goodhemp on Instagram so we can share them with the world!
Cooked using
- 1 medium ripe banana
- 30ml maple syrup
- 3/4 teaspoon baking powder
- 1 tablespoon ground almonds
- 200ml Good Hemp Seed Milk
- 180g plain flour
- Fresh berries to serve
- Coconut yoghurt to serve
- Coconut flakes to serve
Method
Begin by adding the banana, maple syrup, baking powder, ground almonds, Good Hemp Seed Milk and flour to a blender. Blend until smooth.
Heat a large non-stick pan on a medium heat and add a drizzle of oil of choice. Add 1.5 tablespoons of batter per pancake and cook until bubbles appear across the whole surface.
Carefully flip the pancakes over and cook for 1 minute more on that side.
Stack and top with coconut yoghurt, fresh berries and coconut flakes. Enjoy!
