Mood Boosting Beans by Lauren Lovatt

Not only is Lauren an incredibly talented chef, she is also passionate about the power of food to transform mental health.  We fell in love with her over some hemp brownie balls she made for our Go Boats event back in 2019, now we’re extremely proud that Lauren’s joined the Good Gang as an ambassador. She makes crazy good things out of hemp and is a fountain of knowledge when it comes to all things eating plants. We love these mood boosting beans, who couldn’t do with a pick me up at the moment?

At a time when the little things make such a difference to our days this recipe is here to bring you  a mood boost. Did you know the effect food can have on our minds? Not just the ingredients we use but the act of cooking, coming together and maybe even the memories and the feeling food creates.

So these beans, we hope, do exactly that. With a meditative cooking process and serving ideas to suit everyone. PLUS they are spiked with Good hemp CBD to bring a sense of calm and kimchi for flavour and that extra gut love. If you fancy a real treat  top with parsnip ‘cheese’ for a retro throwback and totally cozy meal.

Try them with a hot crispy roasted potato, on toast, with nachos, as part of a English breakfast or here we have served with tortillas in Mexican Lauta style, just to shake things up!

Cooked using

Ingredients
  • 4 tbsp Good Hemp Oil
  • ¼ tsp salt
  • One Leek, thoroughly washed
  • One Celery stick, washed
  • One Carrots, peeled
  • 1 tbsp Tomato puree
  • 1 tsp White miso paste
  • 2 tbsp Harissa or chilli sauce
  • 200ml Tomato passata
  • 100g water
  • Two tins, mixed beans, drained and rinsed
  • 100g Kimchi
  • 2 pipettes Good hemp CBD

Method

Cut the leeks, carrots and celery into even sized pieces. It’s really important the pieces are small here so slice the leek 3mm thick all the way to the top using all the green. Then take the tops of the carrots and cut them into 3mm by 3mm cubes, or as small and even as you can make them.

Heat a medium saucepan with hemp oil. Sauté the vegetables with a long pinch of salt until soft and lightly golden but not brown. This will take 4 – 5 minutes.

Add the tomato puree, miso, harissa and 1 tbsp of the kimchi and  cook for a further minute to release the aromas and flavours.

Add the tomato passata and water and cook for ten minutes until the sauce is reduced by ⅓.

Add the beans and cook for a further five minus, the reason we add the beans now is so they don’t break down too much. At this point take one ladle of the mixture out of the pan and add it to a blender. Cool before blending especially if you are using a nutri-bullet style blender that is totally sealed. If the mixture is hot the blender will not be happy!

Blend this mixture until smooth and then fold it back through the beans, this gives a much more luxurious texture. When you add the blending part back into the beans make sure you mix it thoroughly and heat everything through. The Mood Boosting Beans at this point should have a good amount of sauce but not look too liquid, you can of sauce cook them to the thickness that you like.

After this time turn off the heat and add the rest of the kimchi and Good Hemp CBD.
