Kimchi and Nori Vegan Sushi Rolls
These nori rolls are a fresh and raw spring and summer snack. They are perfect for a quick and easy lunch and seasonal vegetables can be used.

- Nori Rolls
- 50g vegan Kimchi
- 1 carrot, 1 beetroot, 1 cucumber, 1 spring onion
- A selection of micro herbs / sprouts
- 2 Nori sheets
- Massaged Kale
- 100g Kale washed and stripped from the stems
- 2 tbsp sesame oil
- 1 tbsp tamari
- CBD dipping sauce
- 2 tbsp brown rice miso
- 1 pipette Good Hemp CBD oil
- 1 tsp lions' mane mushroom powder
- 50 ml Good Hemp Oil
- 50 ml water
Prepare the vegetables by peeling them if necessary and then cutting them into fine juliennes and thin strips, set aside while you get everything else ready.
Add the kale to a large bowl with the sesame oil and tamari and massage until soft and nicely wilted, set aside.
For the dipping sauce, whisk all of the ingredients together until smooth, set aside in a small bowl.
To make the nori rolls, place the nori on a clean flat surface/sushi rolling mat.
Add the kimchi in one long line from edge to edge on the bottom third of the roll.
Then add the veggies from edge to edge and the kale too. Finish with sprouts and then carefully roll, pulling the nori sheet tightly as you go.
Cut into eight with a wet knife and serve with the dipping sauce.
