A few weeks ago we published our own recipe for a healthy hemp chia pudding, so we were thrilled when Amy of @Nourishing.Amy decided to create this breakfast with her own spin on it. Her hemp chia pudding uses blueberries and caramelised banana to add a decorative and delicious touch to this omega-rich breakfast. This recipe is easily doubled so increase the volume as necessary to make a few breakfast bowls. The pudding will keep for up to 3 days in the fridge in an airtight container. Enjoy!
Nourishing Amy’s Hemp and Blueberry Chia Pudding with Caramelised Banana
Place the chia seeds, hemp hearts and cinnamon in a jar or sealed container and mix. Mash half of the banana and add to the chia mix with 200ml milk, 1 tbsp syrup (if using) and the blueberries. Give the chia pudding a good stir and allow to rest for 10 minutes before stirring again and leaving in the fridge for at least 4 hours (or overnight). When ready to serve the pudding, check the mix isn’t too thick and add the extra milk if needed.
Slice the second half of the banana lengthways. Melt the coconut oil in a frying pan and add the sliced bananas. Allow to cook for a minute or so on each side until slightly golden before drizzling over the remaining syrup plus the ¼ tsp cinnamon and fry on either side until nicely caramelised, about 2 minutes.
To serve, pour the chia pudding into a bowl, top with the caramelised banana, extra blueberries and enjoy. Serve with any extra toppings like yoghurt, granola and nut butter.
