Gingerbread Men

Every year you promise yourself that you’re going to make gingerbread men, and then December hits and you realise you’re busy every evening until New Years day. Well, not this year.

This is the year that you’re yearning for a shitty work Christmas do, you’d happily put up with a stale function room in a hotel just outside the M25 if it meant you got to sit inside with some pals. Alas, it’s just you and your house, trying to find something new to watch. We want to put forward a different activity to fill your Christmas time with – gingerbread man baking! It’s wholesome fun the entire house can take part in, you’ll forget all about the better activities you could be doing if it weren’t for a pesky virus.

For this recipe you’ll need a gingerbread man cutter and should make around 20-24 little men (depending on the size of your cutter!)

Ingredients
  • 220g plain flour (+ some for dusting)
  • 60g Good Hemp Protein Fibre Boost
  • 1 teaspoon of baking powder
  • 2 teaspoons of ground cinnamon
  • 1/2 teaspoon of ground ginger
  • 1/2 teaspoon of ground nutmeg
  • 1/4 teaspoon of ground cloves
  • 55g light brown sugar
  • 100g molasses
  • 30ml melted coconut oil
  • 40ml maple syrup
  • 60ml dairy free milk
  • 125g icing sugar
  • 2 tablespoons aquafaba (juice from a can of chickpeas)

Method

Begin by combining the flour, hemp protein, baking powder, ground cinnamon, ginger, nutmeg, cloves and sugar in a bowl and stir to combine.

Next add the molasses, melted coconut oil, maple syrup and milk. Mix until a ball of dough is formed and then either wrap in cling film or leave in the bowl and put in the fridge for 2+ hours.

When ready to bake preheat the oven to 180c and line 3 baking trays with parchment paper.

Sprinkle some flour on your work surface and rolling pin and roll the mixture out until it’s around the thickness of a £1 coin. Use your cutter to cut out the gingerbread men (or shapes of choices) and then carefully place them on the lined baking trays leaving little space in between each guy. Bake in the oven for around 15 minutes then leave to cool.

While your gingerbread men are baking prepare the icing by combining the icing sugar with the aquafaba, a little at a time until all mixed in. You should be left with icing that’s runny enough to pipe yet stiff enough to hold its shape once piped. To stiffen the icing, just add a little more icing sugar. Once happy with your icing, empty it into a piping bag and place in the fridge to harden slightly.

Once the gingerbread men have cooled decorate them with the icing and allow to dry before eating. Enjoy!
