Cinnamon White Hot Chocolate

We asked Tajda aka @myveganminimalist to come up with a hot chocolate recipe that was tasty, christmassy and a little different from your average add-chocolate-powder-and-stir. By God she delivered. Sweet and spicy (how many of us in the Good Hemp office describe ourselves), this cinnamon white hot chocolate will warm you up and fill you up, perfect for when you get in from work/school/uni/anywhere that forces you to go outside. Plus, if you’ve got a special guest coming round, don’t do the classic ‘cup of tea?’ – make em one of these bad boys and they’ll be instantly impressed. Plus, when you make it it makes your house smell amazing. Plus, it’s ridiculously pretty and looks like it’s been swiped straight from the ‘Last Christmas’ music video.

Ingredients
  • 300ml Good Hemp seed milk
  • 1 tsp vanilla extract
  • 150g white (vegan) chocolate
  • A pinch of salt
  • 1-2 tsp cornstarch
  • 1/4 tsp cinnamon
  • 1/4 tsp mixed spice
  • Optional toppings: whipped cream, chocolate shavings, marshmallows, cacao nibs, shredded coconuts

Method

Cut white chocolate into small chunks.

Add 250ml of seed milk and chopped white chocolate to a medium-sized pan. Heat on medium heat while whisking occasionally until chocolate is fully melted and add a pinch of salt.

Separately, add the cornstarch to a small bowl. Slowly add 50ml of seed milk and whisk vigorously to form a perfectly smooth mixture. Ensure no lumps are left.

Add your cornstarch mixture to the chocolate mixture. Keep the heat set to medium and stir from time to time while waiting for the mixture to thicken up, once thickened, add vanilla extract, cinnamon and mixed spice.

Once mixed in, remove from the heat, pour into cups and sprinkle with toppings of your choice.
