Chocolate & Hemp Energy Balls

We have Tajda Ferko aka @myveganminimalist to thank for these beautiful energy balls that can-you-believe-it taste even better than they look. They are the perfect combination of healthy and indulgent (read in a Steve Carrell voice from Crazy Stupid Love) meaning you can have these as a breakfast on the go, or a post-dinner treat. What’s even better is that they have only 4 ingredients that are probably already in your cupboard and take barely any time to make. This means that next time you’re feeling something sweet you can whip these up even quicker than it takes to walk down to the corner shop for some oreos – no excuses now! You can store these in an air tight container for up to 1 week, although we doubt they’ll even last two days without ‘magically disappearing’ (queue your housemate promising to make you more…)

Ingredients
  • 400g pitted dates
  • 5 tbsp hemp seeds
  • 2 tbsp cocoa powder
  • 50g cashews
  • A pinch of salt
  • Extras: 50g cashews for rolling

Method

First, soak the dates in a bowl of very hot water for 10 minutes, allowing them to soften.

Drain the dates and then add them to a food processor, process until left with a smooth paste.

Add the rest of your ingredients to the food processor and then blitz very quickly for about 10-15 seconds, until all of the ingredients are just combined. You should be left with a thick dough-like mixture, which you should be able to roll into balls. If the mixture falls apart when rolled, mix in a teaspoon of water.

Roll the mixture into 14-16 equally sized balls, then dampen your hands and roll each of the balls into finely chopped cashews or extra hemp seed.
