Apple and Cinnamon Muffins

Muffins for breakfast? You had me at “muffins”!

These delicious apple and cinnamon muffins aren’t as naughty for you as they might look! They are packed with protein, healthy fats, fibre and they are gluten free  🙌🏻

They can be enjoyed as a nutritious breakfast or healthy snack! They are also ideal for freezing so if you want to make a large batch of these goodies for a later date, then go ahead and freeze them! If we are being honest, we would eat all ours within 24 hours of baking and there wouldn’t be any left for freezing…..


  • Dry ingredients
  • 2 cups old-fashioned oats
  • 3/4 cup ground almonds
  • 1/4 cup of Good Hemp 46% Protein Powder
  • 1 tbsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2 tsp of baking powder
  • Pinch salt
  • 1/2 cup mixed seeds and crushed nuts
  • 2 apples peeled and cut into small pieces
  • Wet ingredients
  • 1/2 cup maple syrup
  • 1/2 cup unsweetened applesauce
  • 2 eggs (or vegan alternative)
  • 1 cup of Good Hemp Seed Milk
  • 1 tsp vanilla extract


Combine the wet ingredients in one bowl.
Combine the dry ingredients in another bowl.
Mix the wet and dry ingredients together then add the apple chunks.
Divide mixture evenly between 12 muffin cases.
Bake at 180°C for about 30 minutes, or until a knife comes out clean.
